Angela is back with the volunteers at Grow Blackpool for another fun ‘Grow and Eat!’ session making Beetroot soup.

Sam, Chris, Steve, and Barbara were on hand to help from harvesting and preparing two varieties of beetroot -Chogia and Cymindrica, to cooking and tasting the soup!

Beetroot Soup

2 large or 4 small beetroots (about 750g)
1 tablespoon balsamic vinegar
1 teaspoon dijon mustard
Sauteed onions, garlic and herbs
buttermilk, yogurt or smetana, optional
